Behind The Scenes: Caribbean Cooking With Chef Irie

Hugh Sinclair is better known as the man behind the enigmatic culinary talent Chef Irie Spice. Pulling inspiration from his native Jamaica and local Miami elements, Chef Irie creates a mash up of savory flavors unique to his gourmet fare. His clients are a who’s who list of athletes and entertainers and he remains one of Miami’s most sought after personal chefs. We took on the role of sous chef at the seafront Cabana Beach Club at the Eden Roc Renaissance Miami Beach as Chef Irie granted us an all access pass and showed us how to stir up some food on fire.

On the menu for our one-on-one cooking demonstration was a three-course spread complete with pumpkin rum soup, mussels chorizo and chef’s favorite ackee and saltfish. Chef Irie shared some of his trade secrets and brought a taste of the Caribbean to life as red, green and yellow played on a sizzling skillet. “It smells good! I think you guys are just on the wrong side of the fence here,” he jokes with our cameras. His dishes are almost as colorful as his personality.

During the cooking presentation, Chef Irie got candid with the Venue cameras as he spoke to us about what it was like to grow up in Jamaica. “I love the smell of thyme,” Chef Irie told us. “It reminds me of when my mother use to take me to the market.” Along with stories from his childhood, Chef Irie gave us a taste of what makes Caribbean cuisine so special: “It’s all about love and passion.”

He’s whipped up meals for celebrities and the elite alike, but what’s left to tackle for the island native? Chef Irie tell us he’s ready for the White House. “President Obama, call me,” he says.

You might recognize this Cuban beauty from her cameo in Pitbull’s latest music video “Back In Time” featured in the upcoming summer hit Men In Black III, but this singer holds her own on the international stage. Under the wing of the self proclaimed Mr. 305, Madai is skyrocketing into the limelight with her dance anthems “Mayday” and “Pure Evil”, all while rocking a flawless fashion forward look on her way to stardom. We joined the in-vogue songstress at the posh Koko Palenki boutique in the Village of Merrick Park for a first-hand look at Madai’s fashion favorites. With her adorable pup Armani in tow, the performer dished on her top looks for summer and replied to your style and beauty questions.Madai flaunted her style in everything from printed shorts to sparkling cocktail numbers with the Venue Digital cameras there to capture every fabulous detail. Pairing flirty shades of neon green and fuschia, she admits to loving this juicy color blend. When asked how she would describe her style, Madai confessed to combining sophisticated sexy pieces with a fun and fresh look.

As she emerges as a fashion maven in her own right, timeless beauties Audrey Hepburn and Marilyn Monroe continue to inspire Madai’s undeniable fashion sense. Her advice to women hoping to glam it up Madai-style: “Don’t show too much, keep it classy!” The shapely Latina embraces her curves but shares the importance of showing off one great asset at a time. “Keep it under control ladies!”

One thing’s for sure, no matter what Madai is wearing she’ s probably sporting some sky high heels. The fashion lover tells us she’s addicted to them – the higher the heel, the better. She jokes with the Venue cameras and reveals that if she were stranded on a desert island, she wouldn’t be able to live without a few of her most cherished things: her dog Armani, her cell phone and great shoes.
